Easy Vegan is a roving pop-up that sets up shop at various locations around Denver, serving sausage mushroom egg sandos, loaded elote-inspired baked potatoes, and cold brew with carrot cardamom cream. The duo behind the enterprise won $50,000 on a Food Network show and is apparently using the cash to open a brick-and-mortar, but until then, visit them at the South Pearl and Highlands Square farmers’ markets, and check out their schedule for a full list of locations, as well as date night-friendly cooking classes and other events across town.
