This posh London landmark with famous lamb chops just opened its only location in the US at Aria, and there’s not a high roller in town who isn’t nudging their VIP host to enter their signature green doors for some of the tastiest (and priciest) Indian food in the city. The wood-panelled dining room has a private members club aura, with all the ingredients for a stellar out on the Strip: deceptively boozy cocktails like the crystal-clear, coconutty pina col-lassi, a wine list so long that it’s on an iPad, and pages of zhuzhed-up Indian classics that don’t skimp on spices and aromatics. The fluffy wagyu naan, tender beef short rib pepper fry and remarkably creamy black lentil dal are all incredible, and the tandoori masala lamb chops live up to the hype, with a tangy walnut chutney to cut through the heat from the marinade. By the way, they don’t (and won’t) tailor the food’s spice level, so wimps should choose wisely.
