Bub’s Bakery is an allergen-free bakery, which means their baked goods use no gluten, dairy, eggs, nuts, soy, and sesame. You can tell. The mushroom danish here isn’t going to taste just like the mushroom danish at your favorite bakery (the one that smells exclusively of butter). But Bub’s is a hype bakery for people who can’t usually go to hype bakeries—and the sold-out cinnamon rolls prove just how much the city needed it. From the team behind Fish Cheeks and Bangkok Supper Club, this tiny Noho spot cranks out an ambitious line-up of baked goods, like slabs of egg on flaky biscuits, and blueberry scones draped in maple glaze. Prioritize the kouign-amann, which oozes with jam and custard, and the mushroom danish, with a layered dough that’s so flaky, we sort of can’t believe it’s not butter. As eaters of everything, we probably won’t be back on a regular basis (though we’ll come back to try that cinnamon roll), but if your dietary restrictions have kept you from the rite-of-passage that is standing on a bakery line, Bub’s Bakery should be your new go-to.
