Included among the skewers in his set menus are liver paté, chicken grilled in pepper and oyakodon (chicken and egg on rice). Always attentive to customers’ voices, he reveals the value of rare cuts such as chicken oyster. Determined to pass on his skills, he often works the grill with apprentices at his side.
