Their version of stamppot, the Netherlands’ national dish, features a mound of potatoes mashed with other vegetables like sauerkraut or kale, then ringed by sausage, bacon, and a meatball, before a swimming pool of gravy is finally poured into the center. It’s best on a chilly or rainy day, as are the other comforting stews like hachée.
