At this charming old school joint attached to the Fairmont Olympic, brine mixes with the smell of fine leather, and the dirty martinis flow freely. The menu features excellent local raw oysters for $2 each during happy hour (try the mellow Cascadia when available). But we like that there’s a few baked options, too, including a version coated in toasty brioche crumbs and lemon herb butter. Find a comfortable seat at the bar, order a half dozen, and try to imagine what the place was like when it was a haberdashery back in the early 20th century.
