Pulitzer’s Bar, inside the Pulitzer Amsterdam hotel, has a mix of globetrotters and locals spruced up for a dressier night out. You’ll pay a pretty penny for the cocktails seductively described in their thematic menu, which at the time of writing is based on a line of perfumes (a Vieux Carre is inspired by the scent of leather, for example). If the weather is nice, head to the garden out back first. It features more basic cocktails, spritzes, and food, but you can always slide back in for the heavier stuff afterwards.
