Piero’s is an independent Italian trattoria that has (and probably will continue to) outlast all the celebrity chef-run restaurants in Vegas. That’s because there’s something special about sitting in one of the oversized leather booths for a candle-lit, romantic meal or covert meeting over some linguine. Always start with the off-menu Garbage Caesar Salad, a twist on the classic upgraded with shrimp, avocado, and crunchy hearts of palm. And if you see the 26-ounce, bone-in veal parmigiana served with a side of fettuccine as one of the daily specials, order it without question. You could also just stop by for a martini at the restaurant’s moody Monkey Bar, where the FBI supposedly used to run stakeouts in the restaurant for alleged mafia activity.
