Their homemade seitan looks and (almost) eats like a bird, and comes perfectly breaded, complete with crispy nubs, and covered in proper Nashville hot fashion. Then there’s the citrus kale salad sub with tender greens and a block of fried tofu—it’s basically a gorgeously tangy salad with crispy bits inside bread, rather than a spongy textural nightmare. The shop sells all kinds of vegan goodies—from jerky to oat milk spray-can cheese to slices of their deli “meats”—and the $6 crunchwrap on Wednesdays could take Taco Bell in a fight any day of the week. When you walk up to the counter to place your order, just make sure you don’t leave out one of their gigantic and soft funfetti cookies.
