Everything about the birria at this South Austin trailer is a little different from other spots in town. The meat tastes richer and the consomé is more heavily spiced, with a sharp and tangy acidity to it. There’s also a layer of cheese that takes on crispy brown edges and adds great texture to a thick taco full of soft, stewed beef.
