Popup popularized rip-and-dip bagels in New York City, which, if you know how intense New Yorkers are about bagel etiquette, is a miracle. Tearing? Dunking into schmear? Blasphemous. But if you get a good batch of Popup’s bagels—warm with blistered crusts and plush insides—you’ll understand how these puffy rings could convert even a purist. At Popup’s first LA location in Brentwood, the bagels aren’t quite as consistent as they are in NYC, but this neon-lit spot is still a good option if you just want to grab a quick bag of fresh bagels. Between the Yeastie Boys truck, old-guard Vicente Foods, and the similarly named Pop’s Bagels, Brentwood is rich with bagel competitors. But even though you won’t find any bagel sandwiches at Popup, they do stand out in other ways. The fluffy, whipped cream cheeses are the ideal texture for dipping (get the scallion flavor), and since the shop replenishes its supply throughout the day with fresh bakes, you’ll be able to smell your order before it's handed to you in a paper bag. The downside? The three-bagel minimum order. It’s slightly annoying if you’re here solo, but on the plus side, the quart of whipped cream cheese on the side is quite generous. If there’s an aspect where Popup struggles, it's the texture. Some batches require gnawing with your molars, others are too spongy, and some are just right. We’ve even experienced all three in one order before (different flavors). Given how crazy the lines can get on weekends, the best move is to order a dozen in advance (the minimum size for pre-orders) or show up on a weekday morning when there’s little to no wait.
