The southern cobb from Greenery Co. in Hillsboro Village creeps into our heads before lunch hour and camps out there until we get our hands on it. It’s everything a cobb should be: substantial in size, protein-forward, and chock full of stuff like eggs, blue cheese, and tomatoes. Then it gets frisky by tossing out the standard avocado in favor of bright marinated beets and putting jalapeño in the mustard vinaigrette. Just make sure you ask for extra—the bowl is very large, and you don’t want any loaded bite going without it.
