Bub's & Grandma's is practically a household name in LA when it comes to sourdough. And now they've dipped their toes into the city's pizza scene. Bub's pizzeria operates out of a small takeout window in Highland Park (until their restaurant space opens sometime next year), serving crispy, thin-crust pies loosely inspired by East Coast pizza shops, available by the slice or as 18-inch whole pies. At $5 each, the hot-from-the-oven slices are a good deal. Nothing groundbreaking, but what you'd expect from a neighborhood spot, covered in tart tomato sauce and a good distribution of quality mozzarella (prioritize the white pie with potato and gooey taleggio, or the classic pepperoni with curled 'roni cups). Whole pizzas arrive hotter and crispier, but less evenly cooked—on one visit, our cheese pie looked great on top, but was too charred and blackened on the bottom. Unique topping combos like a fried eggplant pie with dollops of ricotta, or the crispy greens pie with pickled peppers and prosciutto breadcrumbs, keep things interesting. Our biggest quibble, however, is with the crust, which lacks that distinct bready tang and texture you'd expect from a loaf of Bub's sourdough. That said, the pizza here has potential, and we'll be back to try more of the non-pizza items on the menu (the garlic knots and cannoli are fantastic). For now, expect a small crowd on weeknights and weekends—the best move is to order ahead online and skip the line altogether.
