Chinese restaurants with long menus can be more fun as a group activity, since choosing just one thing feels like a torturous form of FOMO. But at the bare bones Dan Gui, going solo works well, especially at lunchtime. Don’t get us wrong, this Sichuan spot (which might have some kind of endless wholesale deal on dried chilis) is still great for an easy dinner in Bellevue. And that's particularly true if it involves dry pot with some of the best cauliflower we’ve ever had. But it’s hard to argue against an efficient midday meal here. The bento style lunch special arrives with choice of an entree (we like the mapo tofu), plus a fried egg, and egg drop soup or hot and sour soup. The latter is especially good, with thick broth and an eye-flickering sour kick. It’s filling but not over-the-top, and you’ll be out of there in no time.
