If Waltz knew that we once mixed ginger ale with vodka and called it a ‘Dark and Desperate’, they probably wouldn’t let us inside this sanctuary of reverential cocktail creation again. There’s a dramatic 12-seat wooden bar at the Japanese-inspired spot, a navy, abstract birdscape wrapping around the room, and a line-up of glassware that we’ll covet until we eventually marry into the Baccarat empire. But the real theatre happens behind the bar, and thanks to the counter, everyone has a front-row seat. Suited bartenders whip ice around coupes, droplets of hinoki essence are painstakingly pipetted with pinky-out flare, and a micro lemon peel heart is tweezered onto the surface of the highly sippable sake gibson. The subtly sweet and not-so-subtly glamorous vermouth and Suze ‘Brooklyn, Tokyo’ is our pick of the concise menu. Stop by for one whenever a Shoreditch date night or catch-up could do with a perma-hum of hedonism.
