This Capitol Hill restaurant is dedicated to katsu. And with lots of solid versions and meat customizations, there is truly something for everyone. Think rich curry katsu with your choice of kurobota or iberico pork. Umami-loaded miso katsu whether your feeling ebi or chicken. And our favorite: the tangy tomato and mozzarella with ultra thin pork tenderloin wrapped around a borderline excessive amount of melty cheese. Every katsu set comes with lots of little goodies to keep things interesting—sip miso soup between bites, snack on punchy pickles, and hand grind sesame seeds to sprinkle on top for a nutty punch. Although some meat options can be tougher than others or cut a touch too thick, the crispy golden breading is always perfect. Which is probably why it's perpetually busy in here. The best way to go is to make this a lunch excursion when its not quite as mobbed or line up before they re-open for dinner. That is, unless you’d like to wait for over an hour while scaring other diners by looking sad through the windows at them.
