If you’re chronically online, you likely already know about this viral bagel darling from Connecticut. This is their first Georgia location, which sits on the same strip as Hawkers and Playa Bowl on the Beltline’s Eastside Trail (and just a few doors down from Emerald City Bagels). For those who are curious or new to the PopUp Bagels chain, we can confirm the bagels aren’t totally life changing but are still very good. You can see the bagels being made just behind the counter. Helpful servers make sure you know they’re baked every six minutes, and that’s reinforced when you tear a piece from your bagel and steam escapes as if it's been given stage cues. They don’t do bagel sandwiches, and staff aren’t slicing and applying cream cheese for you. The suggested strategy here is to “rip and dip,” so you get a small tub of schmear and full control of how much cream cheese you get in every bite.
