This Bankers Hill spot makes some of the best Edomae-style sushi in San Diego, like perfect, buttery Otoro straight from Tokyo bay and laid on rice cooked in lightly sweet Akazu vinegar. It's serious enough to impress your friend who won't shut up about their trips to Japan, but casual enough for a more chill weeknight date (as long as you book at least a week in advance). And while the nigiri is incredible, our favorite reason to come here is to sit at the bar, order some of the more creative rolls and watch the chefs blowtorch bluefin tuna or A5 wagyu and layer in ingredients like sweet potato and fuji apple—a little unusual, but no less balanced.
