Winner of the 2016 Top Chef contest, Xavier Pincemin is forging his path in his hometown to the delight of his faithful and even international regulars. He delves into the storerooms of local artisans and producers to pay tribute to high-flying culinary traditions. Examples: pearlescent John Dory paired with shellfish broth, different textures of celery and a mind-blowing plant jus of anise hyssop, whose sheer depth and flavour will knock your socks off! Loin of veal is flanked by baby artichoke and pastrami, roast artichoke seasoning and a big-boned, thick, syrupy veal gravy. Pincemin’s culinary ambitions soar even higher come the evenings.
