Some bakeries pull their pastries from the oven and toss them on a rack, but at Hi Bake, they look like they were staged for a Cartier jewelry case. This chain from China has over 60 locations overseas, and its first U.S. outpost in Beverly Hills serves extravagant, over-the-top pastries. Ultra-flaky croissants have a shimmery, mirror-like finish, like the spiral pistachio one that has a spiral lined with chopped nuts and is piped with a light cream, or a danish that goes heavy on truffle oil. But the best treats here are the (relatively) simple egg tarts. Filled with matcha cream or blueberry jam, their wavy edges have layers that you’ll be tempted to peel apart like Post-Its. There are tables with pink umbrellas out front, but don’t expect to leave them clean. Every square inch will be dusted in flaky debris.
