A poster of two dazzling ballroom dancers behind Pho Filet 2’s register reads, “Live Happy, Eat Phở Daily, Dancing Is The Best.” We wholeheartedly agree. And we believe, with the same passion as that poster, that this casual Viet spot in Rosemead makes the richest, most aromatic broth in the LA area. Pho Filet’s fluorescent-lit dining room has long communal tables where families slurp chewy rice noodles. If you show up on the weekend, don’t let the crowds scare you. The waitlist moves quickly, and once you order, the phở arrives even faster. (FYI the OG Pho Filet is two miles away if you don’t care to wait, but it’s also smaller.) The rich beef broth here is opaque and fragrant like a double-steeped tea, with green onion and star anise immediately greeting your nose. All of those aromatics soak into whichever cuts of meat you order with your noodle soup, like ribbons of gently cooked brisket, jelly-like tendon, or, if you’re particularly hungry, a whole short rib jutting from the bowl like an iceberg. Pho Filet’s non-soup dishes are great, too, including their football-sized bánh xèo packed with shrimp, but those are best suited for group meals or people with extra stomachs. For a solo meal here, always follow the poster’s advice: eat some phở today.
