When we bid farewell to much-beloved Carmen’s in the Reading Terminal Market, Uncle Gus’ Steaks took its place. It’s backed by a Philly-food supergroup: the owners of DiNic’s, Pearl’s Oyster Bar, and Angelo’s. An Angelo’s cheesesteak it is not, but Gus’s are similarly overstuffed, and those with cooper sharp are juicy and delicious (steer clear of the sandwiches with provolone, as they can come out overcooked and dry). The sesame rolls are crackly and satisfying, and these cheesesteaks are definitely the best you can do in RTM. But if you have the time, there are other cheesesteaks in town worth waiting for.
