This essential restaurant in the Las Letras district, now run by chef Javier Goya, was born with the idea of answering the question: what type of restaurant would we like to eat in? The result is this modest, minimalist-style eatery with a strong focus on top-quality ingredients and sustainability, featuring relaxed dishes that showcase the very best seasonal produce. Their aim is to recreate pure and traditional flavours without closing the door on the culinary cultures of countries such as Peru and Japan. Alongside its set menus (Festival of Classics, Seasonal Tasting, Bar, Weekly etc), it offers an à la carte that is also enticing thanks to the option of ordering half and even one-third portions to enable guests to sample lots of different dishes. An interesting selection of artisanal cheeses is also available.
