No trip to Singapore is complete without a mountain of chili crab, and the best place to dive in like a local is Jumbo Seafood, which has been serving its version of the classic dish since 1987. It’s worth making the trek to the original location by the beach, where a balmy sea breeze lends a relaxed atmosphere to the seafood carnage that’s about to ensue. The waiter will ask you to choose the type and weight of crab that you want—you don’t need the highest grade, the entry-level mud crab will suffice. Just remember to order lots of fried crispy mantou buns to mop up the tomato-based chili sauce that’s more sweet and tart than truly spicy. (Pepper crab is the other version of this dish you could get if you prefer a more explosive kick.) Then you suit up in plastic bibs and gloves, grab the crab shell-breaking tools, and get into the messy work of digging for that sweet meat. The rest of the menu, while overwhelmingly extensive, is also worth exploring to pad out the meal: get the chewy stir-fried mee goreng noodle as a base, prawns in a creamy salted egg sauce for some umami crispiness, and braised beancurd topped with a milky sauce of crab meat and egg whites to balance out all the spiciness. To drink, fresh coconuts are served with a little spoon to help you scrape out their sweet flesh.
