You might wait a little longer at Nikko than other teriyaki spots in town, but that’s because greatness takes time. (Just ask Leonardo Da Vinci.) The chicken is slam-the-steering-wheel good, with a slow-cooked tenderness that lives at the intersection of grilled and braised. There’s a gorgeous sear that gets out of its own way, salad dressing with sour-apple zing, and a gingery sauce we simply have zero notes for. There’s no finer example in West Seattle.
