This kitchen delivers two tasting menus focused on contemporary Mexican cuisine. One is entirely vegetarian, while the other draws on ancient local traditions while simultaneously modernizing and elevating the dishes. Tuna is impeccably presented on a lovely plate with raised edges, and the exquisite pieces, paired with avocado and caviar, as well as fermented daikon, make for an excellent beginning to the meal. Pork belly al pastor is popular in this part of Mexico, but here it's a notch above. The wine list features bottles from Mexico and the United States, as well as Champagnes and European varieties.
