八村里的故事 “成都老味,以藏茶汤调味” 藏着码头烟火与茶马温情。 八村里的火锅老味,始于清末成都锦江东门码头的烟火市井。相传百年前,码头 “工人” 劳作后,总在八村巷弄支起铁锅,用本地牛油、花椒、辣椒熬煮牛杂驱寒,这便是老成都火锅的雏形。 如今的八村里,仍坚守老规矩:藏茶选雅安百年老茶树原料,经 “渥堆发酵” 古法工艺制成,茶汤需慢熬 3 小时出味;牛油只用本地水牛油纯油,辣椒、花椒按祖辈传下的 “三两五钱” 老秤配比,文火慢炒。
