味道很好,鱼片口感真不错,鲜的辣的都好吃,就住附近,来来回回吃了好几年了,味道一直在线
一、品质:新鲜是灵魂 石斑鱼的新鲜度是评价的第一标准。这家店的鱼是现从海鲜池捞的,肉质紧实有弹性,鱼皮光滑无破损,眼睛明亮,完全没有腥味(很多餐厅的鱼放久了会有淡淡的氨味,这里完全没有)。服务员还主动告知:“鱼是今天早上刚到的,保证活蹦乱跳。” 用筷子戳鱼肉时,能感觉到纤维紧致,没有松散感,说明鱼的品质很好。 二、烹饪方式:火候与调味的平衡 我点的是清蒸石斑鱼(如果是其他做法,可替换为红烧/烤制等),这种做法最能考验厨师的功底——既要保留鱼的原汁原味,又要让调味恰到好处。 ● 火候:蒸的时间掌握得很精准,鱼肉刚刚熟透,没有“老”或“生”的情况。鱼肉表面微微收缩,但内部依然保持嫩滑多汁,用筷子轻轻一夹就能分开,不会有“柴”的感觉。 ● 调味:清蒸的调味很简单,用的是生抽+蚝油+少许糖+香油调的酱汁,淋在鱼身上后,再浇一勺热油激发出葱香。酱汁的咸鲜刚好,没有掩盖鱼的鲜味,反而更突出了石斑鱼的“甜”(石斑鱼本身有淡淡的清甜味)。如果喜欢重口,可以蘸一点桌上的辣椒酱,但我觉得原味已经足够好。 三、口感与细节:刺少、肉嫩、服务贴心 ● 口感:鱼肉非常细腻,没有粗纤维,入口即化,完全没有腥味。刺主要是大刺,很容易剔除,服务员还主动过来帮忙,把鱼刺挑干净,很贴心。 ● 细节:摆盘很精致,鱼放在一个椭圆形的盘子里,上面铺了一层切得细细的葱丝和红椒丝,再淋上热油,葱香和红椒的微辣混合着鱼香,看起来很有食欲。鱼头和鱼尾都处理得很干净,没有多余的鳞片或血丝。
