坑烤,即地坑烧烤,就是在地上挖个坑,将食物放入坑内烤熟,据说早在明清时期东北民间就有类似烹饪手法。坑烤发展到近现代,工艺、口感经过了无数次改良,品种也由单一的烤肉,演变到烤土豆、鸡蛋、烤鹅、笨鸡等食材 坑烤是吉林省地方特色美食。本品牌创始人对传统坑烤工艺进行了改良:砌一个深一些的实心锅台,然后把一些碎砖头高温加热放进去,一层砖头一层食物,食物是用锡纸包裹的,让食材营养鲜味牢牢锁住。 坑烤大公鸡选用东北农村散养10个月以上红毛大公鸡,其肉质鲜美、营养丰富。经过泡,晒,烤,闷等工艺,外焦里嫩将营养牢牢锁住。
