开封,八朝古都。开封美食,绵延千载。包子之始,或言于诸葛亮征孟获,以面覆牛、羊、猪肉。宋人孟元老《东京梦华录》记载东京物阜学华,言及市井饮食,中有梅家包子铺,鹿家包子铺,各类腥肉品包。 南宋耐得翁《都城纪胜》中载临安(今杭州)酒店分有包子酒店,专卖鹅鸭肉馅包子。读之有垂涎之态,思之有回味之感。传至于今,开封灌汤包便以“中华名小吃”闻于世。 其皮透明,洁白如瓷。褶皱匀称,似如层云。再辅之以精制肉、汤正所谓“提起一缕线,放下一蒲团,皮像菊花芯,馅似玫瑰。”五味调和于其中,人生百味尽可现。
