傲鳗的第一家餐店诞生于2015年,那时北京还没有以鳗鱼饭为特色的日料餐厅,即使隐匿在将台路高家园的小区里,我们仍然看到不少食客“穿越北京城,只为这一碗鳗鱼饭”的认可与支持。 傲鳗师从日本三重县烤鳗大师伊藤忠,八年来一直遵从关西传统烤鳗技法,活鳗剔骨现串,炭烤直烤不蒸,历经20多分钟多番蘸汁,工序严苛复杂。 傲鳗严选本鳗幼鳗,碳烤后外层焦脆内里鲜嫩,一条鱼即出一份饭;精选越光米饱满甘香有嚼劲,是与烤鳗的绝佳搭配;备长炭稳定而持久的高温,是炭香的源泉;秘制酱汁以百年老店的汁底加以调制养成,是傲鳗鳗鱼饭的灵魂
