I recently visited Shan Jiupin (Shangjiangfu Branch), a spot specializing in Shaanxi cuisine like oil-splashed noodles, cold skin noodles, and roujiamo (Chinese pork burger)—and it left me with a great impression, especially the roujiamo and the environment. First, the space was a nice surprise: clean, bright, and decorated with a simple, cozy vibe that made dining feel relaxed, not cramped at all. It’s way more pleasant than some casual noodle shops, which was a big plus. Then the star of my meal— the roujiamo! The crust was perfectly crispy, cracking slightly when I took a bite, and the inside was fluffy. The braised pork filling was rich and well-seasoned, not too fatty, with just the right balance of saltiness and aroma. Every bite was satisfying, and it tasted just like the authentic roujiamo I’ve had in Shaanxi. I also tried a side, and it paired perfectly with the burger. Service was quick too; my order came out in just a few minutes, which is ideal for a casual lunch or dinner. Overall, this Shan Jiupin branch is a solid pick if you’re craving tasty, authentic Shaanxi food in a comfortable setting. I’ll definitely be back to try their oil-splashed noodles next time!

《油泼面的魂魄》 热汽裹着麦香扑上来时，便知道这碗面成了。宽面像黄河支流般盘踞碗底，刚离沸水的面身还绷着劲道，辣椒面与蒜末小山似的堆在脊梁上，葱花是最后撒的，翠生生地缀在赭红里。 菜籽油烧到十成热的刹那最见功夫，青烟刚窜起一线，手腕一倾，金瀑便泼在料山上。"滋啦"声响得像爆竹，辣子与蒜末在滚油里跳舞，花椒粒炸出麻香的魂魄。热油在面皮上烫出细小的金斑，醋沿着碗沿悄悄滑下去，在碗底酿出酸香暗河。 挑起一筷，面皮带着油光颤动，辣香混着麦香往鼻子里钻。齿尖破开微焦的油膜，内里仍是糯的，蒜粒黏在舌根化开辛辣，花椒的麻在后槽牙上轻轻打转。吃着吃着，额角便渗出细汗，却停不下筷——那油香活像是从秦腔里淬出来的火，烫得人喉咙发紧，心头滚热。
