第二次来,菜的口味一如既往的赞。饭店陈设也很不错,大气舒适。特别是还有专门打牌的地方,光线很好,窗帘拉开就能看到窗外的风景。吃饭前三五好友先来喝喝茶,打一把牌,携胜利的喜悦,再上桌品尝美食,也是极好的。
帝王蟹三味堪称当代庖厨的炫技之作。"霜烧蟹斗"以喷枪瞬间锁住蟹膏的肥腴,焦糖脆壳下流淌出琥珀色蟹油,佐以十年陈花雕凝成的啫喱,醇厚与清冽在舌尖奏出华彩琶音;"椰香焗蟹钳"将海南岛的灵魂注入深海霸王,椰浆浸润的蟹肉泛着珍珠光泽,尾调漫出若有似无的香茅气息;最惊艳莫过于"蟹黄炊饭",蟹膏与日本越光米在柴火土灶中缠绵,每粒米都裹着金箔般的蟹油,让人想起《随园食单》里"饭之甘,在百味之上"的绝句。 当那道古法盐焗文昌鸡端上桌时,时间的褶皱突然被熨平。侍者轻敲开琥珀色盐壳的刹那,混合着沙姜与枸杞的馥郁蒸汽漫卷而出。鸡皮如琉璃般透亮,皮下凝冻的胶质在37℃的舌尖温柔坍塌,肉质纤维里渗出的汁水带着淡淡药香——原来后厨特配了五指山鹧鸪茶与十二味草本同焗。这般返璞归真的料理,恰似张岱笔下"乳酪琥珀,不可名状"的至味。
