钵钵菜是湖南省的传统名菜,已有2500多年的历史。钵钵菜用陶制的炖钵,随小火炉上桌,边煮边吃,是古代先民“鼎食文化”的完美体现。 湖南冬春寒冷潮湿,夏秋干燥湿热,钵钵菜正好能驱寒去湿,增进食欲。钵钵菜通常取材于湖南本土养的畜禽、新鲜时蔬,小火慢炖,炖出食材的原汁原味,营养丰富。 湖南人热情好客,来湖南常德5百姓家中做客,不炖几个钵钵不成敬意,朋友小聚,不炖几个钵钵不显气氛之浓烈。钵钵菜被列为湖南非物质文化遗产。而珼鼎钵钵菜的创始人也是湖南非遗桃源钵钵菜的传承人---傅常清先生
