在潮汕吃牛肉火锅,一般都用当天宰杀的新鲜牛。通常的方式是,屠宰场就在牛肉火锅店一两小时车程的地方,午后问斩,下午十五六点钟便以摩托飞车载着已经大卸八块的牛肉送到牛肉店。是以潮汕的牛肉不冷冻,不排酸,用牛骨熬制的锅底清汤一涮即吃,令人仰止的便是潮汕人的这种对新鲜的苛求和对本味的执著。 潮汕人在清水牛肉火锅中捉捕牛肉的弹劲,火锅所弃置不用的后腿肉,则被制作成另一种优越弹劲的美味牛肉丸。对于潮州式牛肉丸的由来,大致可追溯到上世纪的上半叶,很多客家人来到当时的新兴城市汕头发展经商,他们不仅带头铺设了潮汕铁路,兴建了百货大楼,也带来了沿街贩卖的牛肉圆(客家人称“圆”而不称“丸”)。
