1998年,我爷爷在重庆南岸的老巷子里支起一口大铁锅。蜂窝煤炉子烧得通红,牛油混着辣椒在锅里翻滚,香得整条街的邻居都端着碗来排队。那时候没有机器,备菜全凭一双手,这份手艺,我们三代人守到了现在。 我们严守 “慢工出细活” 的规矩。辣椒坚持手工剪,精选二荆条去蒂留籽,石柱红剪成小段,让底料香辣浓郁。牛油每日清早采购新鲜牛板油,小火慢熬 6 小时去腥提香。菜品皆手工制作,每日现采食材,坚守重庆老火 从爷爷的煤炉子到如今电磁炉,锅与店都变了,可有些始终未改:炒料用黑铁锅,坚持手工菜与重庆老火锅传统手艺,九宫格永留 “小火格” 照顾怕辣者。这便是重庆人的 “巴适”,吃的是几十年不变的手艺与诚意 。
