• 面条特点:剔尖两端细长,中间部分稍宽厚,白细光滑,软而有筋,入口柔韧,易于消化,是晋中民间主要面食之一。 • 酱料与配菜:酱肉通常选用五花肉等部位,经酱油、大料、干辣椒等调料卤制而成,色泽红润,酱香浓郁。配菜丰富多样,常见的有土豆条、豆芽、黄瓜丝等。此外,还可根据喜好添加西红柿鸡蛋卤、炸酱等不同浇头,增加口感的丰富性。 • 制作方法:先将面粉加水,少量多次搅拌成有粘性且偏软的面团,松弛20分钟左右。接着将肥肉下锅炒出油脂,再放入瘦肉炒变色,加入葱姜蒜、豆瓣酱、干黄酱等调料,倒入适量热水,放入干辣椒段、花椒粉等,将肉炖至软烂,出锅前勾薄芡制成酱肉。然后把醒好的面团放在剔尖板上,用筷子沾水,将面团剔成细长条入锅煮熟,捞出后加入酱肉和配菜即可。
