Watching Martsu-san (Masato Hika) shaking a cocktail is like seeing the hand-object synthesis of a Spanish musician playing the castanets, although with the latter, it is sometimes acceptable to bounce the percussive instrument against one’s thigh; at Root Down, however, the executive bartender respectively keeps his tools of trade above waist-level.  The *clack-clack-clack* of the cocktail shaker is sporadic, but music — jazz, in particular — is a constant at the Japanese-style listening bar, where each and every song has been specially selected for the evening — this isn’t your AI-powered Spotify ‘Discover Weekly’ playlist.  Equal care is put into the cocktail menu, which is full of imaginative inventions. What I order here: ✦ Namesake ‘Root Down’ cocktail dedicated to music lovers. Crazy strong, but mellows out as your perfectly carved ice cube melts. Intersperse small sips with tiny bites of accompanying Nama chocolate for a bittersweet symphony.  ✦ ‘Brown Sugar Cheese Mousse,’ an espresso martini adjacent made with Okinawa brown sugar liqueur. (Just do not guzzle this just before bedtime if sensitive to caffeine!) ✦ Not like any negroni you’ve had, the ‘Latino Negroni’ arrives with an amorphous coconut-coated ice cube rather resembling a kombucha scoby. You might not spot its name on the menu any more, but Martsu-san would be happy to break out his ‘castanets’ again to make you one, if you please.
