内蒙古的烧麦,是有历史渊源的。据考证,呼和浩特的烧麦最晚起源于元代初期、今内蒙古呼和浩特(过去叫归化城)一带的商途茶馆。清朝时通过晋商传到京津等地,被称为“捎卖” 清早起来,一家人或三五好友相约着去街里的烧麦馆,一起喝茶聊天吃烧麦,土生土长的内蒙人,很是享受这种文化。 羊肉烧麦的做法,也是非常有讲究的。必须是现杀的本地羊,羊肉取八瘦二肥,手工切成0.5厘米见方的肉丁入馅。调馅时,除了普通佐料,稍麦皮直径10厘米,放入小蒸笼,上气蒸10分钟取出,配自制蘸料上桌。
