端州深夜食堂里的潮汕鲜,藏在佳记的生腌[色][色] 腌鲜蟹:冰镇里的鲜甜暴击,潮汕生腌的灵魂是“鲜”,佳记的腌鲜蟹选的是膏满肉肥的梭子蟹,整只泡在秘制卤汁里。掀开蟹壳的瞬间,橙黄色的蟹膏像凝脂般颤巍巍的,裹着蒜末、香菜和少许白酒的香气扑面而来。用筷子挑起一块蟹肉,滑嫩得像布丁,卤汁的咸鲜带着微微的酒香,恰好衬出蟹肉本身的清甜,没有丝毫腥味。冰碴在碗底慢慢融化,让每一口都带着沁凉的爽快感,难怪老客总说“这一口,比海风还鲜”。 腌血蛤:卤汁里的一口鲜,血蛤端上来时还冒着冷气,外壳带着细密的纹路,轻轻一掰就开。肉瓣上挂着透亮的卤汁,带着潮汕特有的鱼露香,还混着点南姜的辛辣。入口先是卤汁的咸鲜,咬破那层薄薄的膜,鲜美的汁水在嘴里爆开,肉质脆嫩得恰到好处,丝毫没有土腥味。据说老板每天凌晨去市场挑血蛤,只选壳薄肉厚的,难怪这一口鲜,能让潮汕食客都点头称是。 炒海瓜子:炒海瓜子是潮汕小炒的功夫活,佳记的师傅火候拿捏得极准。海瓜子个个开口,裹着蒜蓉、辣椒和紫苏叶的香气,镬气十足。用牙签挑出肉来,韧中带嫩,咸辣里透着海鲜的清甜,紫苏的独特香味更是点睛之笔,让人忍不住一口接一口。配着冰啤酒下肚,连壳都想嗦干净,这大概就是深夜食堂最治愈的模样。 吃到兴起时,看邻桌的大叔点了砂锅粥,绵密的米粥里卧着鲜鱿和排骨,香气顺着热气飘过来。结账时老板说:“我们的腌料都是潮汕老家带过来的,就想让肇庆人吃到地道的海味。” 走出店门,晚风带着江边的潮气,嘴里还留着腌蟹的鲜甜和海瓜子的镬气,原来在端州的深夜里,藏着这样一口来自潮汕的鲜活。
