起源自1895年,先祖洪芋头于台南外海从事渔业,每年四~九月台风季节,渡船有倾覆之险,故俗称「小月」。为度过小月,挑担沿街卖面,并悬挂「度小月」之灯笼。自此度小月就和担仔面划上等号。 在历经这段百年历史的岁月,将担仔面传统古法流传至今,风味依然原汁不变;在美食料理上以「新台湾料理」自居,深度挖掘各地方特有食物材料,融合入时令、入菜,并呈现台湾多元而有包容性之饮食文化。 担仔面的特色在于精致小碗,没有肥肉的肉燥,味道香浓强烈,配以鲜虾头熬成的高汤。先以热水热碗,面稍烫一下即可捞起,撒上豆芽、香菜再佐以肉燥、蒜泥、五印醋、剥壳虾成为一碗热腾腾风味特殊的担仔面
