去惠州临时找了一家饭店,交通还算便利,服务员特别热情。 「白切胡丝鸡」有点特别,鸡的品质很好,第一次吃热的白切鸡,哈哈哈,而且蘸料里面有花生酱 「生焗粉肠排骨煲」排骨很新鲜,粉肠比较瘦不够肥,但是味道不错 最后点了个空心菜,也不错。
公庄酒家:客家山野的醇厚馈赠 推开雕花木门,陶制酒瓮的沉郁香气便裹着客家乡音扑面而来。公庄酒家扎根惠州三十载,这间金辉新苑分店犹似山民待客的厅堂——粗木梁下悬着腊味,青瓷坛里封着自酿红曲酒,跑堂阿叔端出的瓦钵还滋滋冒着油星,未及动筷,粗犷的山野气息已撞入肺腑。 必试的古法窑鸡是火焰与泥土的杰作。选用走地三黄鸡,腹中塞满客家老菜脯与沙姜,裹上三层玉扣纸埋入滚烫窑土。上桌撕开的刹那,琥珀色鸡皮绽出焦香,肉汁混着菜脯咸鲜汩汩涌出,连鸡骨都透着柴火香。**酸菜炒大肠**更显山民智慧:酸芥菜用米汤发酵出清冽酸香,与弹韧的猪肠在铁锅里共舞,酸味巧妙化去油腻,只留脆爽与脂香在齿间缠绵。 最动人的是那碗自磨酿豆腐。石磨黄豆蒸腾着热汽,嵌入土猪肉馅的豆腐在砂煲里咕嘟,豆香混着猪油香从孔隙里丝丝渗出。夹起一块蘸辣椒豉油,嫩豆腐在舌上化开时爆出肉馅的咸鲜,恍见客家阿婆在灶台前磨豆的身影。收尾来碟萝卜粄,腊肠虾米裹在晶莹米粿里,油煎后外脆内糯,山海的滋味尽收方寸之间。 离店时跑堂塞来一袋红曲酒糟:“煮鸡汤撒一勺,暖身子哩!” 客家滋味的真谛,原在这粗陶坛中封存的山风与人情。
