徽商臭鳜鱼如今已是徽菜代表之一,臭鳜鱼又称“桶鲜鱼”,闻起来臭,吃起来香。既保持了鳜鱼的本味原汁,肉质又醇厚入味成蒜瓣状。在当年,臭鳜鱼的烹制与徽商有着一段奇妙的缘分。古时徽州的沿江鱼贩将鳜鱼以木桶装运至徽州山区,为防鲜鱼变质,采取一层鱼洒一层淡盐水的办法,经常上下翻动,如此七八天抵达屯溪等地。打开木桶,有一股浓浓的臭味,但在洗净后经热油稍煎,细火烹调,味道鲜美,最终成为头牌徽菜。 徽菜的形成同徽州的发展和鼎盛有着密切的关系,而徽州当地物产丰富的特征也为徽菜的形成奠定了良好的基础。徽州山高背阴,竹林密布,溪流清澈,各种奇珍异兽遍布山河,徽菜以烹制山珍海味而著称就是得益于此。
