巴陵全鱼席制作工艺独特,文化底蕴深厚。经过一代代的传承,由特一级厨师张克亮先生在收集并总结前人经验的基础上精心研制的全鱼席,创立了多个经典菜品。 巴陵全鱼席作为湘菜三大支派之一的洞庭湖区派的代表菜,1988年巴陵全鱼席16个菜品入选《中国名菜谱》,1989年被评为湖南省“金牌菜”,1991年编入湖南《名菜名点》,1993年被纳入《世界旅游菜谱》 菜品全是用鲜鱼为原料烹制而成的,烹饪技艺在色、香、味、形上独出心裁,别具一格。讲究滋味,注重营养,使人食鱼不见鱼,知其味不见其形,一鱼一形,一形一味。
