收藏了两年的店终于来盘了,店里全是重庆老辈子。点了招牌的「酸菜鱼」,说实话低于我的预期,就是酸菜➕泡椒味的鱼,汤底不太浓,没啥特色,感觉和我家里做的味道差不多。「白砍鸡」也将就,更喜欢汶珺的白坎鸡。总体味道都很普通,价格也贵,两个人就点这两个大菜加个番茄炒蛋,吃了200+,性价比太低了。这种水平只值人均70+。
掀帘进新马鱼庄时,正撞见师傅在案前片鱼,银光一闪,鱼片就滑进了盆里。酸菜鱼是镇店的底气,白瓷盆端上来,奶白汤里浮着金黄的酸菜,鱼片薄得透光,筷子夹着颤巍巍,滑进嘴里先觉嫩,而后酸菜的酸鲜漫上来,带着点泡椒的微辣,汤底泡饭能扒两大碗。 白砍鸡卧在青花瓷盘里,鸡皮泛着油亮的琥珀色,筷子一戳就破,皮肉间凝着层冻,蘸碟是秘制的红油蒜泥,辣得温吞,蒜香却霸道,混着鸡肉的鲜甜,嚼起来脆嫩带劲,像极了老江湖的爽快。 火爆腰花得趁热抢,腰花切得花刀分明,在热油里爆得焦香,尖椒的辣气裹着腰花的鲜,脆得弹牙,一点腥气都无,配着白米饭,筷子根本停不下来。尖椒拱嘴是暗藏的妙物,拱嘴卤得入味,切得薄厚刚好,和青尖椒同炒,嚼着Q弹带劲,辣香钻进每丝肉里,就着冰啤酒,是夏夜最得劲的配搭。 满桌菜冒着热气,邻桌划拳声混着锅铲响,江湖气漫在空气里。原来好吃的馆子从不用花哨,就凭这口扎实的鲜辣,就能让人吃得额头冒汗,心里却熨帖得很。
