Mikiya is shabu shabu for the wagyu-obsessed. Run by the same people behind Chubby Cattle (who are probably opening five more “Chubby” restaurants as you read this), this high-energy AYCE hot pot spot in the SGV has a thumping EDM soundtrack and an army of servers speedwalking around the room with plates of marbled beef. The multiple menu tiers are slightly confusing at first, especially since the booklet that explains them is thicker than most magazines. But here’s the shortcut: Skip the gold and diamond tiers unless you specifically want the highest-grade wagyu or a massive seafood platter rolled up to your table on a cart. The silver tier is more than enough for most, with plenty of wagyu cuts available to keep your pot busy. Every table comes equipped with an iPad that lets you submit an order every 10 minutes (a.k.a., nine rounds in the 90-minute time limit), and servers will show up before you’ve had a chance to blink. The whole operation is so efficient, we’re tempted to ask what broadband system they’re using and if we can install it at home.
