You can’t talk about ramen in Austin without talking about Ramen Tatsu-Ya. The noodle shop now has four locations across town, and the Tatsu-Ya team has since launched offshoots like Tiki Tatsu-Ya, DipDipDip Tatsu-Ya and BBQ Ramen Tatsu-Ya — more on that later. The pork Tonkotsu broth is rich and savory, while the Assari chicken broth is lighter, but still deeply tasty. Standout toppings include brown butter corn, fried Brussels sprouts and “bombs,” which bring flavor and heat to your bowl.

JINYA Ramen Bar’s smooth 20-hour cooked broth is the base to their fully customizable soups, which range from the signature JINYA Tonkotsu Original 2010 to the Flying Vegan Harvest, an ideal option for a meat-free meal. The Domain hotspot is always bustling with guests enjoying the reliably delicious ramen in a sleek and contemporary space.

The paitan broth at Sazan is made from a blend of chicken and pork and served in delectable dishes like the Spicy Paitan and Ma-Yu Black. Sazan’s inviting and modern interiors contribute to the wonderful dining experience. After opening to great success in the Highland neighborhood in 2020, the Sazan Ramen team will soon expand to a second location in West Campus.

The South Congress staple is primarily known for its sushi — in fact, it’s one of our favorite sushi spots in town — but their Robot Ramen is equally as impressive. The soup is topped with pork belly, bean sprouts, pickled ginger and a 144-degree egg that all take the yummy broth to another level. Start the meal with fresh sashimi and nigiri before relishing in a comforting bowl of noodles.

Chef Vinh Thai finally opened his Ramen 512 brick-and-mortar in Oct. 2021 after previously serving his ramen at local pop-ups and a takeout and delivery-only ghost kitchen. The noodle shop now boasts a legion of fans who visit for a full range of ramen variations. From clear chicken and dashi broth to creamy pork broth and vegan almond milk broth, everything is made from scratch with passion and excitement, resulting in mouthwatering bowls of ramen.

Cooked for more than 24 hours, the authentic Japanese broth at Kanji is the star of the show. Try the Katsu Ramen, a bowl of Kanji’s signature noodles topped with a fried panko-crusted pork cutlet and katsu sauce for a filling meal, or slurp up the Veggie Ramen for a vegetarian-friendly dish that doesn’t skimp on flavor.

When you think of Komé, you probably don’t think of ramen, but their noodle soup options are not to be missed. The team behind Komé previously operated downtown restaurant Daruma Ramen, which closed in 2020, giving them solid experience serving up ramen. You can’t go wrong with the popular miso variation, which is made with kombu dashi, ground pork and a myriad of other tasty toppings.

Marufuku Ramen opened its second Texas location in Mueller’s Aldrich Street district in 2022 and has quickly become one of the top spots in town. The Marufuku team specializes in Hakata-style ramen, complete with decadent broth and ultra-thin noodles. They also offer rice bowls, shareable appetizers and a number of Japanese beers. The original Marufuku opened in San Francisco, later expanding to multiple cities across the country.
